Roasted Pumpkin Seeds with Olive Oil and Sea Salt

Learn how to roast pumpkin seeds after carving your Halloween pumpkin! Baking pumpkin seeds has been an annual tradition in our house for years. To keep our toasted pumpkin seeds on the healthier side, we bake ours in the oven with olive oil and sea salt. Golden-brown and crispy, these pumpkin seeds are easy to make, and delicious as a snack or added to soups and salads. 

Oh, how I love pumpkin season. Pumpkin cakes, pumpkin breadpumpkin muffins, pumpkin cookies, and of course, roasted pumpkin seeds.

With Halloween eve upon us, we carved our jack-o-lanterns today, and then roasted the seeds with olive oil and sea salt for a healthy snack for the kids to nibble on.

How to Roast Pumpkin Seeds with Olive Oil and Sea Salt

Roasting pumpkin seeds is a fun Halloween tradition to do with your kids every year after cleaning out your pumpkins. In case you’ve never done it before, I thought I’d show you how to roast pumpkin seeds quickly and easily. Your kids will love helping. It’s a great way to extend your pumpkin carving festivities.

Pumpkin seeds are nutritious!

Although they’re small, pumpkin seeds are packed with nutrition, so hopefully they’ll offset some of the not-so-healthy snacking that the kids when they come home from trick-or-treating. Read more about the nutritional value and health benefits of pumpkin seeds here.

Ways to use roasted pumpkin seeds

Roasted pumpkin seeds aren’t just for snacking. You can use them as a garnish and add them to other recipes as well.

I love to garnish a bowl of soup with toasted pumpkin seeds. They’re especially delicious sprinkled on top of butternut squash soup or homemade tomato soup.

I also love them sprinkled into a salad or tossed in with my homemade granola. 

Spice up your toasted pumpkin seeds!

Here’s our simple pumpkin seed recipe to get you started.

Ingredients:

  • seeds from one large pumpkin
  • 1-2 tbsp olive oil (or butter, vegetable oil, canola oil etc.)
  • Sea Salt

 How To Roast Pumpkin Seeds:

  1. In a colander, rinse your seeds under cold water to remove the pumpkin pulp.
  2. Pat the seeds dry with a paper towel or clean tea towel, and transfer them to a bowl.
  3. Drizzle with olive oil, and give them a stir until they’re all coated.  Go easy on the oil.  A little goes a long way.
  4. Sprinkle your seeds with salt, stir well, and spread in a single layer on a baking sheet.
  5. Bake your pumpkin seeds at 350ºF for 20-30 minutes, stirring at the half-way mark.

How Long to Bake Pumpkin Seeds:

Although I’ve recommended roasting your pumpkin seeds for 20-30 minutes, they can burn quickly, so keep an eye on them while they’re baking, and take them out as soon as soon as they’re golden brown.

Hot! Hot!

Pumpkin seeds are extremely hot just out of the oven, but they do cool down quickly. You may hear them sizzling and popping on the pan when you remove them from the heat, so give them a few minutes to cool before grabbing a handful.

Sweet and Salty?

If you love a little sweet with your salty, toss a handful of candy corn in with your pumpkin seeds.

  • 2 cups pumpkin seeds
  • 1-2 tsp Olive Oil
  • dash Sea Salt

Instructions

  • In a colander, rinse the seeds under cold water to remove all pulp.

  • Pat dry or swirl a paper towel around in the colander for a minute or two to absorb the water.

  • Transfer the seeds to a bowl and drizzle with olive oil.

  • Sprinkle with salt and stir well.

  • Spread in as single layer on a baking sheet.

  • Bake at 350ºF for 20 minutes, stirring at the halfway mark. 

  • Oven temperatures vary so keep an eye on your seeds. Remove them from oven when they reach a golden brown as they can burn quickly.
